1 block (14 oz) firm tofu, pressed to remove excess moisture and cut into 1-inch cubes

2 cups fresh pineapple, diced into bite-sized pieces

1 red bell pepper, chopped into squares

1 cucumber, thinly sliced into rounds

1 cup cherry tomatoes, halved

1 ripe avocado, diced

¼ cup red onion, finely chopped

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon sesame oil

1 tablespoon maple syrup or honey (for sweetness)

1 tablespoon fresh lime juice (about ½ lime)

1 teaspoon fresh ginger, minced (or more for extra zing)

Salt and pepper to taste

½ cup fresh cilantro or mint leaves, roughly chopped, for garnish

Optional: Toasted sesame seeds and lime wedges for serving

Marinate the Tofu: In a medium mixing bowl, whisk together the soy sauce, sesame oil, maple syrup, lime juice, and minced ginger to create a marinade. Add the cubed tofu to the bowl and gently toss to ensure that each piece is well coated with the marinade. Cover and let it marinate for at least 15-20 minutes at room temperature or up to an hour in the refrigerator.

In a large mixing bowl, combine the diced pineapple, chopped red bell pepper, sliced cucumber, halved cherry tomatoes, diced avocado, and finely chopped red onion. Toss the vegetables gently to combine them evenly.
