Ingredients

4 whole wheat pita breads

1 cup marinara sauce (or your choice of pizza sauce)

1 ½ cups shredded mozzarella cheese

½ cup sliced pepperoni (or substitute with grilled chicken, salami, or your preferred protein)

1 cup chopped bell peppers (any variety or color)

½ cup sliced black olives (optional)

1 teaspoon Italian seasoning (a blend of oregano, basil, and thyme)

1 tablespoon olive oil

Fresh basil leaves for garnish (optional)

Salt and pepper to taste

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) to ensure it reaches the optimal temperature for baking.

Prepare the Pitas: Carefully cut each whole wheat pita bread in half to create pockets. Open each pocket gently, ensuring the sides remain intact for filling.

Make the Filling: In a medium mixing bowl, combine the marinara sauce with the shredded mozzarella cheese. Add the sliced pepperoni, chopped bell peppers, and black olives (if using). Sprinkle in the Italian seasoning and season with salt and pepper. Mix well until all ingredients are evenly combined.

Stuff the Pita Pockets: Take each opened pita pocket and spoon in the pizza filling generously. Be careful not to overstuff them, as this could make it difficult to close them securely.

Brush with Olive Oil: Lightly brush the outside of each stuffed pita pocket with olive oil. This will help them develop a beautiful golden hue when baked.

Bake: Arrange the stuffed pita pockets on a baking sheet lined with parchment paper. Bake in the preheated oven for about 12-15 minutes, or until the cheese is bubbly and melted, and the edges of the pitas are crispy.

Garnish and Serve: Once baked, remove the pita pockets from the oven and allow them to cool for a few minutes. If desired, garnish with fresh basil leaves for a pop of color and flavor. Serve warm and enjoy!
