Ingredients

1 cup all-purpose flour

1/2 cup pumpkin puree (ensure it's not pumpkin pie filling)

2 tablespoons brown sugar

1 tablespoon granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

1 cup buttermilk (or substitute with regular milk mixed with 1 tablespoon vinegar for a quick buttermilk)

1 large egg

2 tablespoons melted butter (plus extra for greasing the pan)

Cooking spray or additional butter for greasing the pan

For the Dip:

1/2 cup maple syrup

1/4 cup cream cheese, softened to room temperature

1 teaspoon vanilla extract

A pinch of ground cinnamon for garnish

Instructions

Prepare the Batter: In a large mixing bowl, combine the all-purpose flour, brown sugar, granulated sugar, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt. Whisk these dry ingredients together until they are evenly mixed and there are no clumps.

Combine Wet Ingredients: In a separate medium bowl, add the pumpkin puree, buttermilk, egg, and melted butter. Mix these wet ingredients together until you achieve a smooth and uniform mixture.

Mix Dry and Wet Ingredients: Carefully fold the wet mixture into the dry mixture using a rubber spatula. Stir gently until just combined; it’s perfectly fine if there are a few small lumps—do not overmix.

Heat the Pan: Preheat a non-stick skillet or griddle over medium heat. Lightly coat the surface with cooking spray or a small amount of melted butter to prevent sticking.

Cook the Pancake Sticks: Pour approximately 1/4 cup of batter onto the skillet for each pancake, shaping them into rectangles or elongated strips to resemble sticks. Cook for about 2-3 minutes, or until bubbles visibly form on the surface of the pancakes. Flip them over and cook for an additional 2-3 minutes, or until they are golden brown and cooked through. Repeat this process with the remaining batter, adjusting the heat as necessary to ensure even cooking without burning.

Make the Dip: In a small bowl, beat the softened cream cheese with a fork until smooth. Gradually mix in the maple syrup and vanilla extract until well combined. Add a pinch of cinnamon for a hint of flavor, and adjust the sweetness to your preference.

Serve: Cut the cooked pancakes into sticks and serve them warm on a platter. Place the cream cheese dip in a small bowl alongside for dipping.
