Ingredients

For the Cake:

1 ½ cups all-purpose flour

1 cup canned pumpkin puree

½ cup granulated sugar

½ cup packed brown sugar

½ cup unsalted butter, softened to room temperature

2 large eggs

1 tsp vanilla extract

1 tsp baking powder

1 tsp baking soda

½ tsp salt

1 tsp ground cinnamon

½ tsp ground nutmeg

½ tsp ground ginger

For the Pecan Topping:

1 cup pecans, coarsely chopped

½ cup brown sugar

2 tbsp all-purpose flour

1 tsp ground cinnamon

2 tbsp unsalted butter, melted

For the Glaze (optional):

1 cup powdered sugar

2-3 tbsp milk

½ tsp vanilla extract

Instructions

Preheat Your Oven: Begin by preheating your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or a 9x9-inch square baking dish to prevent sticking.

Mix the Dry Ingredients: In a medium bowl, thoroughly whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger. This blend of spices will enhance the cake's autumn flavor. Set the bowl aside.

Cream the Butter and Sugars: In a large mixing bowl, combine the softened unsalted butter with the granulated and brown sugars. Using an electric mixer set to medium speed, beat the mixture until it becomes light and fluffy—this should take about 2-3 minutes.

Incorporate the Eggs and Pumpkin: Add the eggs to the butter and sugar mixture one at a time, ensuring each egg is well combined before adding the next. Once all the eggs are added, stir in the pumpkin puree and vanilla extract until the mixture is nicely blended.

Combine Wet and Dry Mixtures: Gradually add the dry ingredient mixture to the pumpkin mixture. Mix gently until just combined—be careful not to overmix. The batter should be thick and creamy, perfect for the cake's structure.

Prepare the Pecan Topping: In a separate bowl, mix together the chopped pecans, brown sugar, flour, and ground cinnamon. Then, drizzle the melted butter over the mixture and stir until all the pecans are well-coated.

Layer the Cake: Spoon half of the pumpkin batter into the prepared pan, spreading it evenly across the bottom. Sprinkle half of the pecan topping over the first layer. Pour the remaining pumpkin batter on top, smoothing it out, and finish by adding the remaining pecan topping evenly across the surface.

Bake the Cake: Place the cake in your preheated oven and bake for 35-40 minutes. To check for doneness, insert a toothpick into the center; it should come out clean when the cake is ready.

Cool the Cake: After baking, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely, allowing its flavors to deepen.

Make the Glaze (optional): As the cake cools, prepare the glaze by whisking together the powdered sugar, milk, and vanilla extract in a small bowl until smooth. Adjust the thickness by adding more milk if necessary, aiming for a drizzle-able consistency.

Serve: If desired, drizzle the glaze over the cooled cake for a sweet finish. Slice generous pieces and serve warm with a steaming cup of coffee or tea—an ideal treat for cozy autumn gatherings!
