Ingredients

1 cup all-purpose flour

1/2 cup almond flour

1/2 cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

2 teaspoons pumpkin pie spice

1/2 cup canned pumpkin puree

2 large eggs

1 teaspoon vanilla extract

1/2 cup mini chocolate chips (optional)

1/2 cup chopped walnuts or pecans (optional)

Additional sugar for dusting

Instructions

Preheat the oven: Set your oven to 350°F (175°C). Prepare a baking sheet by lining it with parchment paper.

Mix dry ingredients: In a spacious mixing bowl, combine the all-purpose flour, almond flour, granulated sugar, baking powder, baking soda, salt, and pumpkin pie spice. Whisk them together until the mixture is uniform and well blended.

Blend wet ingredients: In a separate bowl, combine the pumpkin puree, eggs, and vanilla extract. Whisk until the mixture is smooth and homogenous.

Combine mixtures: Gradually pour the wet mixture into the dry ingredients, stirring gently until a sticky dough begins to form. If you choose to add chocolate chips or nuts, fold them into the dough at this point until evenly distributed.

Shape the dough: Lightly dust your hands with flour, then divide the dough into two equal sections. Shape each section into a log, approximately 12 inches long and 2 inches wide. Place the logs on the prepared baking sheet, ensuring there is about 2 inches of space between them.

First bake: Transfer the baking sheet to the preheated oven and bake the logs for 25-30 minutes, or until they turn golden and feel slightly firm to the touch. Once baked, remove the logs from the oven and allow them to cool for about 10 minutes.

Slice the logs: When the logs have cooled enough to handle, use a serrated knife to slice them diagonally into 1-inch thick pieces. Arrange the slices cut-side down back on the baking sheet.

Second bake: Return the biscotti slices to the oven and bake for an additional 15-20 minutes, or until they achieve a crisp and golden brown exterior. Flip the biscotti halfway through the baking to ensure an even texture.

Cool and serve: After baking, remove the biscotti from the oven and allow them to cool completely on a wire rack. For a touch of sweetness, consider dusting with additional sugar once cooled.

Enjoy: Serve your homemade Pumpkin Spice Biscotti Bites alongside coffee, tea, or enjoy them as a scrumptious snack at any time of day!
