Quick Beef and Vegetable Stir-Fry over Rice

Ingredients
  

1 lb (450g) beef sirloin, thinly sliced against the grain

2 tablespoons soy sauce

1 tablespoon oyster sauce

2 teaspoons cornstarch

2 tablespoons vegetable oil (divided)

1 red bell pepper, sliced into strips

1 cup broccoli florets

1 medium carrot, julienned

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

3 green onions, chopped (keep white and green parts separate)

2 cups cooked jasmine rice

Salt and pepper, to taste

Sesame seeds for garnish (optional)

Instructions
 

In a medium bowl, mix the sliced beef, soy sauce, oyster sauce, and cornstarch until the beef is evenly coated. Allow it to marinate for about 10 minutes to absorb the flavors.

    Heat 1 tablespoon of vegetable oil in a large stir-fry pan or wok over medium-high heat. Once the oil is hot, add the marinated beef in a single layer. Sear the beef for approximately 2-3 minutes until it is nicely browned but not fully cooked. Remove the beef from the pan and set it aside.

      In the same pan, add the remaining tablespoon of vegetable oil. Introduce the minced garlic, grated ginger, and the white parts of the chopped green onions. Sauté these aromatics for about 30 seconds, or until they become fragrant.

        Next, add the sliced red bell pepper, broccoli florets, and julienned carrot to the pan. Stir-fry the vegetables for about 4-5 minutes, or until they reach a tender-crisp texture.

          Return the partially cooked beef to the pan and mix everything together. Continue to cook for an additional 2-3 minutes, or until the beef is fully cooked. Season the dish with salt and pepper to your preferred taste.

            To serve, spoon the savory beef and vegetable stir-fry over a generous portion of jasmine rice. Finish by garnishing with the green parts of the chopped green onions, and sprinkle with sesame seeds if desired for an added crunch.
