1 lb (450g) beef sirloin, thinly sliced against the grain

2 tablespoons soy sauce (low sodium preferred)

1 tablespoon oyster sauce

1 tablespoon sesame oil

2 cloves garlic, minced

1-inch piece ginger, freshly grated

1 bell pepper (any color), sliced into thin strips

1 cup broccoli florets, bite-sized

1 cup snap peas, trimmed and cleaned

1 carrot, julienned

2 green onions, sliced thinly (both green and white parts)

Cooked rice or noodles, for serving

Salt and pepper, to taste

Optional: red pepper flakes for added heat

Marinate the Beef: In a medium mixing bowl, combine the sliced beef sirloin with soy sauce and oyster sauce. Ensure the beef is well-coated. Allow it to marinate for approximately 10 minutes while you prepare the vegetables.

    Prep the Vegetables: While the beef is marinating, slice the bell pepper into thin strips, trim and clean the snap peas, and julienne the carrot. Mince the garlic and grate the ginger to ensure maximum flavor release during cooking.

      Heat the Skillet: Place a large skillet or wok over medium-high heat. Add the sesame oil and let it heat until shimmering. Once heated, add the minced garlic and grated ginger. Stir continuously for about 30 seconds, or until fragrant but not browned.

        Cook the Beef: Add the marinated beef to the skillet in a single layer. Allow it to sear undisturbed for about 2-3 minutes until it begins to brown. Then, stir the beef to cook evenly for an additional 2 minutes, or until it is just cooked through and no longer pink.
