Instructions

Prepare the Slaw:

    - Begin by placing the finely shredded cabbage, grated carrots, thinly sliced red bell pepper, and chopped cilantro in a large mixing bowl.

      - In a separate small bowl, whisk together the apple cider vinegar, honey (or agave syrup), a pinch of salt, and black pepper until well blended.

        - Drizzle the dressing over the vegetable mixture and gently toss to ensure all the veggies are well coated. Set the slaw aside to allow the flavors to meld.

          Cook the Shrimp:

            - In a medium-sized bowl, combine the peeled and deveined shrimp with olive oil, smoked paprika, garlic powder, ground cumin, and a sprinkle of salt and pepper. Toss until the shrimp are evenly coated.

              - Heat a non-stick skillet over medium-high heat. Once hot, carefully add the shrimp in a single layer. Cook for 2-3 minutes without stirring, allowing the first side to turn pink and opaque. Flip the shrimp and cook for an additional 1-2 minutes until fully cooked through.

                - Just before removing the shrimp from the skillet, squeeze the lime juice over them for a fresh burst of flavor.

                  Warm the Tortillas:

                    - To make the tortillas pliable and slightly toasted, warm them in a separate skillet over medium heat or directly over an open flame, about 30 seconds on each side, until they become soft and flexible.

                      Assemble the Tacos:

                        - To assemble, place a generous portion of the crunchy slaw onto each warmed tortilla, followed by a serving of the sautéed shrimp.

                          - Add garnishes of extra lime wedges and drizzle with hot sauce if desired.

                            Serve:

                              - Serve the shrimp tacos immediately, encouraging guests to customize with their favorite toppings and enjoy the burst of flavors.
