Quick Turkey and Cheese Quesadillas for Dinner

2 cups cooked turkey, shredded or diced

1 cup shredded cheese (choose from cheddar, Monterey Jack, or a flavorful blend)

4 large flour tortillas

1/2 cup bell pepper, diced (any color for a vibrant look)

1/4 cup onion, finely chopped

2 tablespoons olive oil (or butter for a richer taste)

1 teaspoon taco seasoning (optional, for added spice)

Salsa, sour cream, or guacamole for serving

Fresh cilantro for garnish (optional, for a fresh touch)

Instructions
 

Prepare the Filling: In a medium mixing bowl, combine the shredded turkey, diced bell pepper, finely chopped onion, and taco seasoning (if using). Stir well until all ingredients are evenly distributed.

    Heat the Skillet: In a large non-stick skillet, heat 1 tablespoon of olive oil or butter over medium heat. Allow it to heat for about a minute, ensuring it's hot but not smoking.

      Assemble the Quesadilla: Lay one tortilla flat in the skillet. On one half of the tortilla, sprinkle a generous layer of shredded cheese, followed by a portion of the turkey filling. Add another layer of cheese on top and then carefully fold the tortilla over to form a half-moon shape.

        Cook the Quesadilla: Cook the quesadilla for approximately 2-4 minutes on one side, or until the tortilla is golden brown and crispy. Using a spatula, gently flip the quesadilla over and cook for another 2-4 minutes until the opposite side is golden and the cheese is thoroughly melted.

          Repeat: Once cooked, carefully transfer the quesadilla to a cutting board and keep it warm by covering it with a clean kitchen towel. Repeat the cooking process with the remaining tortillas and filling, adding a little more olive oil or butter to the skillet as necessary for each new quesadilla.

            Serve: After cooking all the quesadillas, slice them into wedge-shaped pieces. Serve them warm alongside salsa, sour cream, or guacamole for dipping. Optionally, garnish with fresh cilantro to add a burst of color and flavor.
