Savory Beef and Cheese Quesadillas for Kids

1 lb ground beef

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 small onion, finely chopped

1 small bell pepper (any color), finely chopped

1 clove garlic, minced

1 tsp ground cumin

1 tsp chili powder

Salt and pepper to taste

4 large flour tortillas

2 tablespoons olive oil (for cooking)

Optional toppings: sour cream, salsa, guacamole

Cook the Beef Mixture: In a large skillet set over medium heat, add the ground beef. Use a spatula to break it into smaller pieces as it cooks. Sauté for about 5-7 minutes, or until the beef is fully browned. Once cooked, drain off any excess grease and return the skillet to the heat.

    Add Vegetables: Into the same skillet, toss in the finely chopped onion, bell pepper, and minced garlic. Sauté these ingredients for 3-4 minutes, stirring occasionally, until the vegetables have softened and the onions are translucent.

      Season: Stir in the ground cumin, chili powder, and a generous pinch of salt and pepper to the beef and vegetable mixture. Cook for an additional 2 minutes, allowing the spices to enhance the flavor of the mixture. Once done, remove the skillet from heat and let it cool slightly.

        Assemble the Quesadillas: Take one large flour tortilla and sprinkle ¼ cup of shredded cheddar cheese over half of the tortilla. Add a generous spoonful of the beef mixture on top of the cheese, then finish off with another ¼ cup of shredded mozzarella cheese. Fold the tortilla in half, enclosing the filling. Repeat this process with the remaining tortillas.

          Cook the Quesadillas: In the same skillet, add 1 tablespoon of olive oil and heat over medium heat. Carefully place one folded quesadilla into the skillet. Cook for about 3-4 minutes on each side, or until the tortilla is golden brown and crispy, adding more oil if needed for cooking. Once cooked, transfer to a cutting board and let cool for about a minute before cutting into triangles.
