Ingredients

1 lb lean ground beef

4 medium russet potatoes, diced into small cubes

1 medium onion, finely chopped

3 cloves garlic, minced

1 bell pepper (red or green), diced

1 cup frozen peas (optional, adding color and sweetness)

2 tablespoons olive oil, divided

1 teaspoon paprika

1 teaspoon dried thyme

1 teaspoon salt, to taste

½ teaspoon black pepper, or to taste

½ cup beef broth (more as needed)

1 cup shredded cheddar cheese (optional, for topping)

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes and cook for about 10-12 minutes, stirring occasionally, until they are golden brown and fork-tender. Once cooked, transfer the potatoes to a plate and set aside.

Cook the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Introduce the chopped onion and diced bell pepper, sautéing for about 5 minutes until softened and fragrant. Next, add the minced garlic and cook for an additional minute, stirring frequently to prevent burning.

Brown the Beef: Add the ground beef to the skillet, using a spatula to break it apart into crumbles. Season with paprika, dried thyme, salt, and black pepper. Cook, stirring occasionally, until the beef is browned and fully cooked through, approximately 6-8 minutes. If there's excess fat, drain it off before continuing.

Combine Ingredients: Return the cooked potatoes to the skillet along with the optional peas. Pour in the beef broth and stir well to combine all the ingredients. Bring the mixture to a gentle simmer, cooking for about 5 minutes. Add more beef broth if the mixture appears too dry.

Cheesy Finish: If desired, sprinkle the shredded cheddar cheese evenly over the skillet. Cover with a lid and lower the heat, allowing it to cook for an additional 3-4 minutes, or until the cheese has melted beautifully.

Garnish and Serve: Once the cheese has melted, remove the skillet from the heat. Sprinkle freshly chopped parsley on top for a vibrant touch. Serve hot and enjoy this comforting, hearty meal!
