1 lb (450g) beef sirloin, thinly sliced against the grain

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil, divided

1 red bell pepper, sliced into thin strips

1 cup broccoli florets, cut into bite-sized pieces

1 cup snap peas, trimmed and ends removed

1 small carrot, julienned

4 cloves garlic, minced

1-inch piece fresh ginger, grated or minced

2 green onions, chopped into small pieces

Salt and pepper to taste

Toasted sesame seeds, for garnish

Marinate the Beef: In a medium mixing bowl, combine the thinly sliced beef with soy sauce, oyster sauce, and cornstarch. Use your hands or a spoon to mix thoroughly, ensuring each piece of beef is well-coated. Let the mixture marinate for approximately 10 minutes to enhance the flavors.

    Prepare the Vegetables: As the beef marinates, wash and cut the vegetables. Slice the red bell pepper, trim the snap peas, and julienne the carrot into thin strips. Wash and break the broccoli into small florets. Having everything prepped will ensure quick and efficient cooking.

      Heat the Pan: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Allow the oil to heat until it shimmers, indicating it is ready for cooking.

        Cook the Beef: Carefully add the marinated beef to the skillet in a single layer, avoiding overcrowding. Stir-fry for about 3-4 minutes, or until the beef is browned and cooked through. Once done, remove the beef from the skillet and set it aside on a plate.
