Ingredients

1 lb (450g) flank steak, thinly sliced against the grain

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil (divided)

1 red bell pepper, sliced into thin strips

1 yellow bell pepper, sliced into thin strips

1 cup snap peas, trimmed

1 cup broccoli florets

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions

Marinate the Beef: In a medium mixing bowl, combine the flank steak slices, soy sauce, oyster sauce, and cornstarch. Use your hands or a spoon to mix thoroughly, ensuring each piece of beef is well-coated. Let it marinate for about 10 minutes, allowing the flavors to penetrate while you prepare the vegetables.

Prep the Veggies: During the marinating time, wash and slice the red and yellow bell peppers into thin strips. Trim the ends off the snap peas and cut the broccoli into uniform florets. Additionally, mince the garlic and grate the fresh ginger to enhance the dish's aromatic profile.

Heat the Pan: Place a large skillet or wok on the stove over medium-high heat. Add 1 tablespoon of vegetable oil and allow it to heat until shimmering, indicating it’s ready for cooking.

Cook the Beef: Carefully add the marinated beef to the hot skillet in a single layer, ensuring not to overcrowd the pan. Sear the beef for about 2-3 minutes without stirring, allowing a nice brown crust to form. After browning, stir-fry for an additional 1-2 minutes until the beef is nearly cooked through. Remove the beef from the skillet and set it aside on a plate.

Stir-Fry the Vegetables: In the same skillet, add the remaining 1 tablespoon of vegetable oil. Toss in the minced garlic and grated ginger, cooking for about 30 seconds or until fragrant. Then, add the sliced bell peppers, snap peas, and broccoli florets to the pan. Stir-fry the vegetables for approximately 4-5 minutes until they are bright in color but still maintain a crisp texture.

Combine Everything: Once the vegetables are perfectly cooked, return the seared beef to the skillet. Toss everything together to ensure the beef and vegetables are well mixed. Continue to stir-fry for an additional 2 minutes, allowing the flavors to meld and the beef to finish cooking.

Serve and Garnish: Remove the skillet from heat. Carefully transfer the stir-fry to a serving platter. Garnish with chopped green onions and a light sprinkle of sesame seeds for an added touch of flavor and elegance.

Enjoy your savory beef and veggie stir-fry hot over a bed of fluffy rice or your favorite noodles for a complete meal!
