Ingredients

4 bone-in pork chops (approximately 1-inch thick)

4 tablespoons unsalted butter

4 cloves garlic, finely minced

1 tablespoon fresh rosemary, finely chopped (or 1 teaspoon dried rosemary)

1 tablespoon fresh thyme, finely chopped (or 1 teaspoon dried thyme)

Salt and freshly ground black pepper, to taste

1 tablespoon olive oil

1 teaspoon smoked paprika

Juice of 1 fresh lemon

Fresh parsley, chopped, for garnish

Instructions

Prepare the Pork Chops:

    - Start by patting the pork chops dry with paper towels to remove excess moisture. This will help achieve a nice sear. Generously season both sides of each chop with salt, freshly ground black pepper, and smoked paprika.

      Sear the Pork Chops:

        - In a large cast-iron skillet or heavy-bottomed pan, heat the olive oil over medium-high heat. When the oil is shimmering, carefully place the pork chops in the skillet. Sear the chops until they are golden-brown on each side, which should take about 4-5 minutes per side. Once seared, remove the chops from the skillet and set them aside on a plate.

          Make the Garlic Butter:

            - Lower the heat to medium and add the unsalted butter to the same skillet (this will enhance the flavor). Once the butter has melted, stir in the minced garlic, chopped rosemary, and thyme. Sauté the mixture for about 1-2 minutes until it becomes fragrant, being cautious to avoid burning the garlic.

              Finish Cooking the Pork Chops:

                - Place the seared pork chops back into the skillet and generously spoon the garlic butter mixture over them. Cook for an additional 4-5 minutes while basting with the garlic butter, ensuring the internal temperature reaches 145°F (63°C) for safe consumption.

                  Add Lemon Juice:

                    - After the pork chops are fully cooked, squeeze the juice of a fresh lemon over them. Gently stir the skillet contents to combine the lemon juice with the garlic butter, infusing the chops with a zesty flavor.

                      Serve:

                        - Carefully plate the pork chops, ensuring to drizzle them with the remaining garlic butter from the skillet. For a vibrant finish, garnish the plates with freshly chopped parsley.

                          Enjoy:

                            - Serve these savory pork chops alongside your choice of sides, such as creamy mashed potatoes or a medley of steamed vegetables, for a hearty and delicious meal!
