Ingredients

1 pound Italian sausage (select either sweet or spicy based on your preference)

2 tablespoons extra virgin olive oil

1 large onion, thinly sliced

2 bell peppers (preferably one red and one yellow), sliced into strips

4 cloves garlic, finely minced

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (adjust according to your spice preference)

Salt and freshly ground black pepper, to taste

1 can (14.5 oz) diced tomatoes, with juices included

1 tablespoon balsamic vinegar

Fresh basil leaves, for garnish

Crusty bread or hoagie rolls, for serving (optional)

Instructions

Cook the Sausage: Heat a large skillet over medium heat and add the Italian sausage. Cook for approximately 5-7 minutes, turning the sausages occasionally to achieve a deep golden-brown color on all sides. Once cooked, transfer the sausages to a plate and set aside.

Sauté the Vegetables: In the same skillet, pour in the olive oil. Once the oil is shimmering, add the sliced onion. Sauté for about 3 minutes until the onion becomes translucent and soft. Next, introduce the sliced bell peppers to the skillet and cook for an additional 5-7 minutes, stirring occasionally, until the peppers are tender.

Add Garlic and Spices: Stir in the minced garlic, followed by the dried oregano, dried basil, and red pepper flakes. Sauté for an additional 1-2 minutes, or until the mixture is fragrant and the garlic is lightly golden.

Combine Ingredients: Reintroduce the browned sausages back into the skillet. Pour in the can of diced tomatoes with their juices and drizzle the balsamic vinegar over the top. Mix everything together thoroughly, then taste and season with salt and freshly ground black pepper to your liking.

Simmer: Lower the heat and cover the skillet with a lid. Allow the mixture to simmer for 10-15 minutes. This will give the flavors time to meld and ensure that the sausages are cooked through to perfection.

Serve: Once cooked, remove the lid and give the mixture a gentle stir. Serve the dish hot, creatively garnished with fresh basil leaves. This mouthwatering creation can be enjoyed alongside crusty bread for soaking up the flavorful juices or inside hoagie rolls for a hearty sausage sandwich.
