Ingredients

For the Shrimp Filling:

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 red bell pepper, diced

1 cup shredded carrots

2 green onions, sliced

2 tablespoons soy sauce

1 tablespoon fresh lime juice

Salt and pepper to taste

For the Blueberry Glaze:

1 cup fresh or frozen blueberries

1/4 cup honey

2 tablespoons balsamic vinegar

1 teaspoon cornstarch mixed with 1 tablespoon water (for thickening)

Pinch of salt

Zest of 1 lime

For Serving:

1 head of butter or romaine lettuce (or a mix of both), leaves separated and washed

Optional toppings: chopped fresh cilantro, crushed peanuts, or sesame seeds

Instructions

Prepare the Blueberry Glaze:

    - In a small saucepan, combine the blueberries, honey, balsamic vinegar, and a pinch of salt over medium heat. Cook the mixture for 5-7 minutes, stirring occasionally, until the blueberries begin to soften and break down, releasing their juices.

      - Once the mixture is bubbling, add the cornstarch-water mixture to the saucepan, stirring continuously. Allow it to cook for an additional 2-3 minutes, or until the glaze has thickened. Remove from heat and mix in the lime zest. Set aside to cool slightly.

        Cook the Shrimp Filling:

          - Heat olive oil in a large skillet over medium-high heat. Add the minced garlic and grated ginger, sautéing for around 1 minute until fragrant.

            - Add the shrimp to the skillet, cooking for 2-3 minutes while turning frequently until they are bright pink and opaque.

              - Stir in the diced red bell pepper, shredded carrots, and sliced green onions. Cook for another 2-3 minutes until the vegetables soften slightly and become vibrant in color.

                - Drizzle the soy sauce and fresh lime juice over the shrimp mixture, and season with salt and pepper to taste. Mix thoroughly and then remove from heat.

                  Assemble the Lettuce Wraps:

                    - Take a leaf of lettuce and place a generous spoonful of the shrimp filling in the center. Drizzle with the fresh blueberry glaze.

                      - Add optional toppings like chopped cilantro, crushed peanuts, or sesame seeds for an extra burst of flavor and crunch.

                        Serve:

                          - Arrange the assembled lettuce wraps on a serving platter and enjoy immediately. Serve with any remaining blueberry glaze on the side for dipping.
