Ingredients

1 lb ground turkey

1 medium onion, diced

2 cloves garlic, minced

1 medium sweet potato, peeled and diced into 1-inch cubes

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes (with their juices)

1 cup low-sodium chicken broth

2 tablespoons chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon salt (to taste)

¼ teaspoon black pepper (to taste)

1 tablespoon olive oil

1 red bell pepper, diced

1 cup corn (fresh or frozen)

Optional toppings: Chopped cilantro, avocado slices, shredded cheese, or sour cream

Instructions

Sauté the Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until it becomes translucent. Stir in the minced garlic and cook for an additional minute, until it becomes fragrant.

Brown the Turkey: Add the ground turkey to the pot. Use a wooden spoon to break up the meat as it cooks, ensuring it browns evenly. This should take approximately 5-7 minutes until the turkey is completely cooked and no longer pink.

Incorporate the Sweet Potatoes and Bell Pepper: Add the diced sweet potato and red bell pepper to the pot. Stir well and cook for an additional 3-5 minutes, allowing the vegetables to soften slightly.

Add the Remaining Ingredients: Pour in the diced tomatoes (along with their juices), rinsed black beans, corn, and chicken broth. Sprinkle in the chili powder, ground cumin, smoked paprika, salt, and black pepper. Stir everything together until well combined.

Simmer the Chili: Increase the heat to bring the chili to a gentle boil, then reduce it to low heat. Cover the pot and let the chili simmer for 25-30 minutes, stirring occasionally, until the sweet potatoes are tender.

Adjust the Seasoning: After simmering, taste the chili and adjust the seasoning if necessary. Feel free to add more salt, pepper, or spices according to your preference.

Serve Up: Dish the chili into bowls and garnish with your choice of optional toppings such as chopped cilantro, slices of avocado, a sprinkle of shredded cheese, or a dollop of sour cream. Enjoy it warm for a hearty meal!
