1 medium onion, diced

3 cloves garlic, minced

1 can (15 oz) black beans, rinsed and drained

1 can (28 oz) diced tomatoes, with their juices

2 cups low-sodium chicken broth

1 cup frozen corn

2 tablespoons chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and freshly ground pepper to taste

1 package (9 oz) refrigerated cheese tortellini

Fresh cilantro or parsley, chopped, for garnish (optional)

Shredded cheese (such as cheddar or Monterey Jack) for serving (optional)

Instructions
 

Brown the Turkey: In a large skillet set over medium heat, add the ground turkey. Cook, breaking it apart with a wooden spoon, until it's evenly browned and no longer pink. Drain any excess fat from the skillet.

    Sauté the Vegetables: With the heat still on medium, add the diced onion and bell pepper to the skillet, along with the minced garlic. Sauté the mixture for about 5 minutes, or until the onions become soft and translucent.

      Combine in Slow Cooker: Transfer the browned turkey and sautéed vegetables into the bowl of a slow cooker, ensuring all the flavorful bits from the skillet make it in.
