Ingredients

2 cups unsweetened shredded coconut

1 cup almond flour

½ cup honey or maple syrup

½ teaspoon vanilla extract

¼ teaspoon almond extract

¼ teaspoon sea salt

½ cup dark chocolate chips (optional, for dipping)

Additional shredded coconut for rolling (optional)

Instructions

Combine Dry Ingredients: In a large mixing bowl, add the shredded coconut, almond flour, and sea salt. Using a spatula or whisk, mix thoroughly until all dry ingredients are evenly incorporated.

Add Wet Ingredients: Pour in the honey (or maple syrup) along with the vanilla extract and almond extract. Stir the mixture well. As you mix, you should notice it starting to clump together, forming a cohesive dough.

Form the Balls: Take about 1 tablespoon of the coconut mixture in your hands and roll it into a small ball. Continue this process until all the mixture is formed into balls, which should yield approximately 20-24 coconut almond balls.

Chill the Balls: Arrange the formed coconut almond balls on a baking sheet lined with parchment paper. Refrigerate them for at least 30 minutes to allow them to firm up.

Optional Chocolate Dip: If you'd like to add a chocolate coating, melt the dark chocolate chips in a microwave-safe bowl. Heat in 20-second intervals, stirring well after each interval until the chocolate is smooth and fully melted. Dip each coconut almond ball halfway into the melted chocolate. For an extra touch, roll the chocolate-dipped balls in additional shredded coconut before placing them back on the parchment-covered baking sheet.

Final Chill: After dipping, return the coconut almond balls to the fridge for another 15-20 minutes to allow the chocolate to set properly.

Enjoy: Serve the coconut almond balls cold or at room temperature. Store any leftovers in an airtight container in the refrigerator for up to one week for a delicious treat whenever you desire.
