4 cups frozen sweet corn, thawed

2 cups shredded sharp cheddar cheese

10 large waffles, crispy (store-bought or homemade)

6 large eggs

1 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1/4 cup chopped fresh parsley (for garnish)

Optional: hot sauce for serving

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish with cooking spray or butter to prevent sticking.

    Prep the Waffles: If using frozen waffles, toast them in a toaster or oven until they are golden brown and crispy. Once toasted, remove them and cut each waffle into quarters. Evenly distribute the waffle pieces across the bottom of the greased baking dish.

      Mix the Filling: In a large mixing bowl, combine the thawed sweet corn and shredded sharp cheddar cheese. Add in the garlic powder, onion powder, smoked paprika, along with salt and pepper to taste. Mix all the ingredients thoroughly until well blended.

        Create the Egg Mixture: In a separate bowl, whisk together the eggs and milk until the mixture is smooth and uniform.

          Assemble the Casserole: Pour the egg mixture evenly over the quartered waffles in the baking dish. Then, sprinkle the sweet corn and cheese mixture on top. Use a spatula to gently press down on the layers to ensure that they combine well.
