2 cups fresh sweet corn kernels (approximately 3-4 ears of corn)

1 1/2 cups shelled edamame (can be fresh or frozen)

1 medium red bell pepper, diced

1 small red onion, finely chopped

1/2 cup cherry tomatoes, halved

1 ripe avocado, diced

1/4 cup fresh cilantro, chopped

Juice of 1 lime (about 2 tablespoons)

2 tablespoons extra-virgin olive oil

1 teaspoon honey (substitute with agave syrup for a vegan option)

Salt and black pepper to taste

Optional: 1/4 teaspoon chili flakes for a touch of heat

Cook the Corn: For fresh corn, bring a large pot of water to a rolling boil. Add the corn ears, and cook for about 3-5 minutes until tender. Remove from the pot, drain, and allow to cool. If using frozen corn, simply steam or microwave according to package instructions until heated through, then set aside to cool.

    Prepare the Edamame: If working with fresh edamame, steam the pods for about 5 minutes or until tender. For frozen edamame, cook them according to the package instructions. Once done, drain and let them cool completely.

      Combine the Veggies: In a spacious mixing bowl, gently combine the cooled sweet corn, edamame, diced red bell pepper, finely chopped onion, halved cherry tomatoes, and diced avocado.

        Make the Dressing: In a separate small bowl, whisk together the lime juice, extra-virgin olive oil, honey (or agave), salt, black pepper, and optional chili flakes until the mixture is smooth and well-blended.

          Toss It All Together: Drizzle the dressing over the salad mixture and use a large spoon to gently toss the ingredients together. Take care to avoid mashing the avocado, aiming to keep the cubes intact for added texture.
