Prep the Sweet Potatoes: Begin by peeling the sweet potatoes. Dice them into approximately 1/2-inch cubes for even cooking.

      Add Ground Turkey: Create some space in the skillet by pushing the sweet potatoes to one side. Pour in the remaining tablespoon of olive oil and add the ground turkey to the empty space. Cook for about 5-7 minutes, breaking it apart with a spatula until it is browned and fully cooked.
