1 medium yellow onion, thinly sliced

3 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon ground cinnamon

1 teaspoon smoked paprika

½ teaspoon salt (or adjust to taste)

¼ teaspoon black pepper

2 tablespoons honey or maple syrup (optional, for extra sweetness)

Fresh thyme or basil leaves for garnish

Sauté the Sweet Potatoes: Begin by heating the olive oil in a large skillet over medium heat. Once the oil is shimmering, add the diced sweet potatoes to the skillet. Season with salt, black pepper, ground cinnamon, and smoked paprika. Cook, stirring occasionally, for about 5-7 minutes, or until the sweet potatoes start to soften and develop a lovely golden brown color.

    Add Onions and Garlic: Once the sweet potatoes are beginning to soften, introduce the sliced onion to the skillet. Continue to cook and stir for an additional 3-4 minutes, until the onions become translucent and tender.
