3 green onions, chopped

1 tablespoon sesame seeds

1 head of butter or iceberg lettuce, leaves carefully separated and washed

Salt and freshly cracked pepper, to taste

For the Peach Glaze:

1 cup ripe peaches, diced (fresh or canned, drained)

1 tablespoon honey (or maple syrup for a vegan option)

1 tablespoon apple cider vinegar

1 teaspoon cornstarch mixed with 1 tablespoon water (optional for thickening)

A pinch of salt

Prepare the Tofu: Begin by cutting the pressed tofu into small, even cubes. In a large skillet, heat the olive oil over medium heat. Add the cubed tofu and sauté for approximately 5-7 minutes, or until the tofu begins to develop a golden-brown crust.

    Flavor the Tofu: Once the tofu is golden, incorporate the minced garlic and fresh ginger. Stir constantly for about 1 minute until fragrant. Next, add the soy sauce, ensuring all the tofu gets an even coating. Season the mixture with a pinch of salt and freshly cracked pepper to taste.

      Incorporate Veggies: Stir in the finely diced red bell pepper, grated carrot, and chopped green onions. Continue to cook for an additional 3-4 minutes, or until the vegetables are tender yet still retain their crispness. Remove the skillet from heat and finish by sprinkling sesame seeds on top for added crunch.
