Tofu Tacos with Lime Slaw

For the Tofu:

1 block (14 oz) firm tofu, drained and pressed

2 tablespoons olive oil

2 tablespoons soy sauce

1 tablespoon smoked paprika

1 teaspoon garlic powder

1 teaspoon ground cumin

½ teaspoon freshly ground black pepper

½ teaspoon salt

For the Lime Slaw:

4 cups shredded green cabbage

1 cup shredded carrots

½ cup fresh cilantro, finely chopped

2 tablespoons fresh lime juice

1 tablespoon apple cider vinegar

1 tablespoon honey or agave syrup

Salt and pepper to taste

For Assembly:

8 small corn or flour tortillas

Avocado slices (optional)

Additional toppings: diced tomatoes, salsa, hot sauce

Prepare the Tofu:

    - Cut the pressed tofu into small cubes or rectangles, about ¾ inch thick. In a mixing bowl, whisk together the olive oil, soy sauce, smoked paprika, garlic powder, cumin, black pepper, and salt. Carefully place the tofu into the bowl and gently toss to evenly coat each piece. Cover and let the tofu marinate for at least 15 minutes, or up to 1 hour for enhanced flavor infusion.

      Cook the Tofu:

        - Heat a non-stick skillet over medium-high heat until hot. Add the marinated tofu cubes in a single layer, ensuring not to overcrowd the pan (you may need to cook them in batches). Sauté for about 5-7 minutes per side, or until the tofu turns golden brown and crispy. Once cooked, transfer them to a plate and set aside.

          Prepare the Lime Slaw:

            - In a large mixing bowl, combine the shredded cabbage, shredded carrots, and chopped cilantro. In a separate small bowl, whisk together the lime juice, apple cider vinegar, honey (or agave syrup), and a pinch of salt and pepper to taste. Pour the dressing over the cabbage mixture, and toss everything together until well combined. Taste and adjust the seasoning if needed.

              Warm the Tortillas:

                - In another skillet or on a griddle, warm the tortillas over medium heat for about 30 seconds on each side, or until they are pliable and lightly toasted.
