1 tablespoon Dijon mustard

1 tablespoon fresh lemon juice

Salt and pepper, to taste

8 large leaves of butter or romaine lettuce, washed and dried

1 ripe peach, pitted and diced

1 tablespoon honey

1 teaspoon soy sauce

1/2 teaspoon ginger paste (or freshly grated ginger for a fresher taste)

1 teaspoon olive oil

Chopped fresh cilantro or sliced scallions for garnish (optional)
