Skewers (wooden or metal; if using wooden skewers, soak them in water for at least 30 minutes)

For the Lemon Salsa:

1 cup ripe tomatoes, diced

1/2 cup cucumber, peeled and diced

1/4 cup red onion, finely chopped

1/4 cup fresh parsley, chopped

Zest and juice of 1 large lemon (for bright flavor)

1 tbsp olive oil

Salt and pepper, to taste

Optional: 1 fresh jalapeño, seeded and finely chopped, for added spice
