Warm Apple Cinnamon Skillet Pancakes

Ingredients
  

1 cup all-purpose flour

2 tbsp granulated sugar

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 tsp ground cinnamon

1 cup buttermilk

1 large egg

2 tbsp melted butter (plus additional for greasing the skillet)

1 cup peeled and chopped apples (approximately 1 large apple)

1/4 tsp nutmeg

Optional: maple syrup for drizzling

Instructions
 

In a spacious mixing bowl, combine the flour, sugar, baking powder, baking soda, salt, and cinnamon, whisking them together until thoroughly mixed.

    In a separate bowl, blend the buttermilk, egg, and melted butter until well incorporated.

      Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. Take care not to overmix; a few lumps are perfectly acceptable!

        Gently fold in the chopped apples and nutmeg, ensuring they are evenly distributed within the batter.

          Heat a cast-iron skillet over medium heat and melt a small amount of butter, tilting it to coat the base evenly.

            When the skillet reaches the right temperature, pour about 1/2 cup of batter for each pancake. Cook until bubbles form on the surface and the edges appear set, roughly 3-4 minutes.

              Flip the pancakes delicately and cook for another 2-3 minutes until they turn a golden brown and are fully cooked.

                Continue this process with the remaining batter, adding extra butter to the skillet as necessary.
