Instructions

Prepare the Crust:

    - Start by preheating your oven to 350°F (175°C). Grease an 8x8 inch (20x20 cm) square baking pan and then line it with parchment paper, leaving some overhang for easy lifting later.

      - In a mixing bowl, combine the all-purpose flour, powdered sugar, and salt. Pour the melted butter into the bowl and mix with a fork or your hands until a crumbly dough forms.

        - Evenly press the dough into the bottom of the prepared baking pan. Bake in the preheated oven for about 15 minutes or until the crust is lightly golden brown. Once done, remove it from the oven and set aside to cool slightly.

          Make the Cherry Filling:

            - In a medium saucepan over medium heat, combine the chopped cherries, granulated sugar, fresh lemon juice, lemon zest, cornstarch, and both the vanilla and almond extracts if you're using them.

              - Stir the mixture continuously until it begins to bubble and thicken, approximately 5 minutes. Once the filling has thickened, remove it from the heat and allow it to cool for a few minutes.

                Prepare the Topping:

                  - In a separate mixing bowl, combine the rolled oats, packed brown sugar, ground cinnamon, and melted butter. Mix well until the ingredients are thoroughly combined and form a crumbly texture.

                    Assemble the Bars:

                      - Carefully pour the cherry filling over the baked crust, spreading it out evenly to cover the surface. Then, sprinkle the oat topping evenly over the cherry layer, making sure to cover it well.

                        Bake the Bars:

                          - Place the assembled pan back into the oven and bake for an additional 25-30 minutes, or until the topping is golden brown and the filling is bubbly.

                            Cool and Slice:

                              - Once baked, allow the bars to cool in the pan for at least 30 minutes. Use the parchment overhang to lift the bars out of the pan. Transfer them to a wire rack and let cool completely before slicing them into squares.

                                Serve and Enjoy:

                                  - Enjoy these zesty cherry bars either chilled or at room temperature. They can be stored in an airtight container in the refrigerator for up to one week.
