Zesty Shrimp Tacos with Avocado Lime Sauce

1 lb (450g) medium shrimp, peeled and deveined

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon smoked paprika

1 teaspoon garlic powder

½ teaspoon ground cumin

Salt and freshly cracked black pepper to taste

1 tablespoon fresh lime juice

Fresh cilantro, chopped (for garnish)

For the Avocado Lime Sauce:

1 ripe avocado, pitted and peeled

½ cup Greek yogurt (or sour cream for a creamier texture)

2 tablespoons fresh lime juice

1 clove garlic, minced

Salt and pepper to taste

Optional: a pinch of cayenne pepper (for a spicy kick)

8 small corn or flour tortillas

1 cup shredded red cabbage

1 medium tomato, diced

1 jalapeño, thinly sliced (optional)

Marinate the Shrimp: In a medium-sized mixing bowl, whisk together the olive oil, chili powder, smoked paprika, garlic powder, ground cumin, salt, black pepper, and lime juice until well combined. Add the peeled and deveined shrimp, tossing them to ensure they are fully coated with the marinade. Cover the bowl and let it sit for about 15 minutes to absorb the flavors while you prepare the avocado lime sauce.

    Prepare the Avocado Lime Sauce: In a blender or food processor, add the ripe avocado, Greek yogurt, lime juice, and minced garlic. Season with salt and pepper. Blend on high until the mixture is smooth and creamy, making sure there are no lumps. If you enjoy a little heat, sprinkle in cayenne pepper to taste and blend again. Taste and adjust the seasoning if needed. Set the sauce aside.
