1 teaspoon salt

Prepare the Zucchini: Start by grating the zucchinis using a large cheese grater. Place the grated zucchini into a clean kitchen towel or cheesecloth, then sprinkle 1 teaspoon of salt evenly throughout. Let the zucchini sit for about 10 minutes to allow the salt to extract excess moisture from the vegetables.

    Squeeze Out Moisture: Once the 10 minutes have passed, tightly bundle the grated zucchini in the towel. Twist the towel to squeeze out as much liquid as you can, ensuring the zucchini has released enough moisture for a sturdy gnocchi dough.

      Make the Dough: In a large mixing bowl, combine the squeezed zucchini with the egg, grated Parmesan cheese, black pepper, garlic powder, and lemon zest. Stir everything together until well combined. Gradually add the flour to the mixture a little at a time while mixing, until a soft but workable dough forms. Depending on the moisture level of your zucchinis, you might need to adjust the amount of flour slightly.

        Shape the Gnocchi: Lightly flour a clean surface and divide the dough into four equal portions. Roll each piece of dough into a rope about ½ inch thick. Cut the ropes into 1-inch pieces to create individual gnocchi. For added texture and flair, gently press a fork onto each piece to create grooves.
